Chewy Oatmeal Chocolate Chip Cookies

It's Friday! Here, have a cookie:

I don't know how you guys feel about oatmeal raisin cookies, but I feel like they're these sad, second-rate cookies (especially when you compare them to CHOCOLATE CHIP COOKIES!)-so it's almost like...why eat them? Don't get me wrong! I love oatmeal cookies...but if there are raisins...I'm eating around them and picking them out. They're just not a Kayle food. Oatmeal cookies just by themselves, though, is like...sad. They are obviously waiting for something else to make them amazing. Enter chocolate chips. Chocolate chip oatmeal cookies are the best of both worlds! When I saw this recipe on How Sweet It Is and she commiserated with my desire for raisin-less oatmeal cookies, and shared this recipe for these incredibly chewy, gooey, perfect looking cookies...I just...could not WAIT! There is absolutely nothing wrong with these. Nothing. Michael loved them. I loved them. They're comforting*, and just so very very good. I know it's summertime and you're probably in the mood for a strawberry spritzer or something, and that's cool-to each their own. Just tuck this little recipe away until the time comes when you want a good old fashioned cookie, with the nuttiness of oatmeal, and the warmth that comes from melt-y chocolate chips. Then, you'll be happy I shared this. Mark my words :)

*Speaking of comforting...I could use some. I just worked this amazing 3 day event for the Book Expo here in NY-it was awesome, loved the people, made great money, etc. etc. I even saw lots of celebs! I met Michael Bolton and saw Tim Gunn, Chris Colfer, Kirstie Alley...and accidentally insulted Jane Seymour...or at least bugged her. I was handing out these flyers for a new weight loss book, giving them to just about anyone who passed by, and as I'm in the midst of handing it out to another person I realize...that person is Jane Seymour. I choke on my pitch and just mumble "...you don't need this..." while she gives me an annoyed look then continues on her way. This entire exchange took about 2 seconds, but oh how mortified I was! I had to share my story with you. I knew you guys would understand. Thank you for bearing with me through this very difficult time. *sigh*



Chewy Oatmeal Chocolate Chip Cookies


Chewy Oatmeal Chocolate Chip Cookies
Makes 15-20 cookies
Ingredients:
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1 1/4 cup chocolate chips
  • 1-2 tbsp. milk, if dough is crumbly
Preparation:
  • Preheat oven to 375 degrees.
  • Using a mixer (handheld or stand) beat butter and sugars until smooth.
  • Mix in egg and vanilla extract until combined, about 2 minutes.
  • Mix in flour, baking powder, salt, and cinnamon on medium speed.
  • Beat in oats.
  • Add milk if the dough is too crumbly.
  • Fold in chocolate chips.
  • Refrigerate dough 15-30 minutes.
  • Remove dough from fridge, prepare baking sheet(s) with parch paper/silpat.
  • Roll dough into large, 1.5 in. balls and place on baking sheet, 2 inches apart. Lightly press on dough balls to flatten.
  • Bake 9-11 minutes.
